How to make Napoleones in 7 easy steps

Have you ever wondered how your favorite pasalubong delicacies are made straight from the factory?

Napoleones. That flaky custard-filled layers of pastry that first became popular in France is now one of the delicious treats from Negros Occidental.

But do you know how it is made?

Here’s how inside the Merzci Pasalubong factory in Bacolod City.

First, lots and lots of butter are mixed with flour using a spiral mixer.

It is then flattened several times into thin sheets with a dough sheeter

This is the freezer where the dough spends an hour before it returns to the sheeter again for the final fold before it is baked.

It will then be cut into small pieces and baked in an oven.

After the baking process, the custard filling will be placed between the dough sheets.

Sugar glaze is added on the top for the final touch.

Total time: 30 minutes

  1. Mix butter and flour

  5. Cutting and baking in the oven

    It will then be cut into small pieces and baked in an oven.

  6. Filling of custard

    After baking, the custard filling will be placed between the dough sheets.

  7. Add sugar glaze over the Napoleones

    Add sugar glaze.

    Sugar glaze is added on the top of the Napoleones for the final touch.
